4 Thanksgiving Recipes to Cook Up at Your Campfire

In celebration of Thanksgiving, we met up with our friends from Barebones Living to curate a list of our favorite holiday dishes to cook and enjoy over the campfire. Whether you’re camping or staying home, cooking these recipes over the fire make for a fun—and tasty—culinary adventure to try this holiday. Because food just tastes better in nature! 

Sweet Potatoes With Pecan Crumble Topping

A virtually effortless recipe that is a showstopper on the menu. This cast iron baked sweet potato recipe with pecan crumble topping is a fan favorite. Grab your cast iron skillet from your Airstream and get cookin’!

Sweet Potato Ingredients:

  • 3 ½ cups mashed yams/sweet potatoes (about 3 medium to large potatoes)
  • 2 eggs, well beaten — Available in the General Store 
  • ½ cup cream
  • ¼ cup softened butter
  • ½ cup sugar
  • 1 tsp vanilla
  • ⅓ tsp nutmeg

Pecan Crumble Topping Ingredients:

  • 1 ⅛ cup brown sugar
  • ¼ cup flour
  • ⅓ cup melted butter — Available in the General Store
  • 1 ¼ cup finely chopped pecans

Instructions:

  • Grab your cast iron and drizzle some olive oil over the pan.
  • Cut potatoes in small chunks and place pieces in your cast iron skillet and wrap failover the top of the pan. Let potatoes cook over the fire until soft (about 20 minutes.)
  • While potatoes are cooking, mix together all ingredients for pecan crumble topping in a medium bowl. Set aside.
  • When potatoes are soft, remove skin, then mash.
  • Mix eggs, cream, butter, sugar, vanilla and nutmeg with mashed potatoes in a large mixing bowl.
  • Once all ingredients are combined, place back in cast iron and scoop pecan topping on top of sweet potatoes and spread evenly.
  • Place foil over the top of the cast iron and cook over the fire for another 45 minutes.
  • Eat straight out of the cast iron or a bowl and enjoy!

Thanksgiving Recipes Charcuterie

Large: Feeds about 8-10 people

4 Meats, 4 Cheeses…and all the goodies! 

  • Cheese: With more room, you can hit every group of milk variety and texture. For example, you might choose a hard sheep’s milk cheese, a semi-firm goat cheese, a soft cow’s milk cheese, and a blue cheese.
  • Meats: All sizes and even variations in meats can come into play. An example spread would include a whole-muscle spiced beef, a whole-muscle smoky pork, a large pork salami with fragrant fennel, and a small salami with the flavors of mole.
  • Accompaniments: Marcona almonds, caramelized pecans, dried /fruits, cornichons, olive variations. Add condiments of peppercorn mustard and/or fruit jam. Breads could include sel gris crackers, salted almond crackers, and a baguette. 

Mulled Fireside Cider

There’s nothing like adventuring through nature with a hot beverage tucked away in your thermos. Trust us: this mulled cider does the trick for warming creaky bones and cold hands.

Thanksgiving Recipes Cider

Ingredients:

  • 1 gallon organic apple cider — Available in the General Store 
  • 3-4 dried star anise pods
  • 12 dried allspice berries
  • 10 whole cloves
  • 1/2 tsp ground nutmeg
  • 5 cinnamon sticks
  • 1 orange, sliced thinly
  • 1 red pear, sliced thinly
  • 1-2 bottles ginger beer (if desired)

Instructions:

  • Grab coals or firewood to prepare your fire — Available in the General Store 
  • Slice fruit and set aside.
  • Pour 1/2 of the cider into a your cast iron pan.
  • Add sliced fruit and dried spice blend, stir gently.
  • Pour in ½ bottle of ginger beer into the mixture (ginger beer can also be substituted with white/red wine).
  • Place the cast iron indirectly over the fire and simmer for 10-15 minutes, or until hot.

  • Add additional fruit slices and spices to top over your drink!

It’s apple picking season and the perfect time to savor some apple pie. Cook it right over the campfire, grab a carton of your favorite small batch and local ice cream from the General Store, and enjoy!

Thanksgiving Recipes Apple Pie
 
Ingredients:
  • 2 green apples, peeled and diced
  • 2 tbsp sugar
  • 2 tbsp brown sugar
  • ¼ tsp cinnamon
  • ¼ vanilla bean
  • 1 tsp cornstarch
  • 1 tbsp + ½ tbsp unsalted butter

Instructions:

  • Combine all ingredients in a cast iron or heavy bottom pan. 
  • Top with streusel.
  • Break up the remaining ½ tbsp butter and place on top of the streusel.
  • Bake uncovered in the fire for 12 minutes. Add the lid and cook another 10 minutes.
  • Remove from heat and let cool.
  • Top with local ice cream — Available in the General Store
